Kitchen Disasters: Well, last week another chef I work with managed to slice the part between his thumb and index finger. I’d call that a disaster.
Ingredients of the Moment: Beetroot. It’s in season and it’s delicious. Also, oysters from Galway Bay.

Secret Ingredients/Tips: Use loads of butter and salt. Mordon Salt.
